Sui Sui sake offers versatile opportunities for restaurants, bars, and retail. Restaurants can feature it in curated sake pairings or omakase menus, while bars and lounges can serve it chilled by the glass or in refreshing sake cocktails. Retailers and bottle shops can showcase Maenikko’s elegant bottles as part of a premium selection, ideal for gifting and special occasions. Mae-Nikkō Brewery also offers custom sake production from just 100 bottles, with brewer Ichizo Kobayashi working directly with clients to develop bespoke flavour profiles in small 60 kg batches (around 100 bottles of 720 ml).

We partner with premium restaurants, bars, retailers, and distributors to share our handcrafted sake with a global audience.

Rice Polishing Ratio

Options include:
• Junmai Daiginjo (35–45%)
• Junmai Ginjo (50–55%)
• Junmai

Rice

Standard options:
• Tochigi Yamada Nishiki
• Kanuma Isehikari
Other rice such as Omachi can also be used (extra cost). Customers may even bring their own rice.

Brewing Style

Possible styles include:
• Fruity and aromatic
• Light and dry
• Rich and full-bodied
The brewer adjusts multiple parameters to achieve the desired taste.

Brewing Water

Default water comes from snowmelt flowing from the Nikko mountains.
Customers can also supply their own water, such as:
• Local spring water
• Regional specialty water

We offer a wide range of custom sake options to cater to your unique preferences.
